THAI BEEF ROLL

burrito tortillas
10 oz ground turkey
1 cup chopped cucumber (no seeds)
1/8 cup chopped cilantro
1 tsp each: ginger, garlic powder, black pepper
2 green onions
sesame oil for cooking
1 tbsp soy sauce
2 tbsp peanut butter
1/4 cup water
2 scoops nutracollagen

1. Chop the green onion and separate the whites and greens parts.
2. Repeat with the cilantro stems and leaves.
3. Dice the cucumber.
4. Place the onion greens, cucumber and cilantro leaves aside to serve fresh on the wraps.
5. In a skillet on medium heat drizzle sesame oil and add the onion whites and cilantro stems.
6. When the onion is tender add the ground turkey and brown to about 75% done.
7. Add the spices, soy sauce and peanut butter with the water.
8. Stir in the collagen and simmer until the liquid is reduced and gone.
9. Heat the tortillas for 30 seconds in the microwave so they wrap easily. Add a scoop of meat and a scoop of the veggies.
10. (optional) Lightly fry the wraps in sesame oil for a crispier wrap.
