1 lb shrimp
1/2 can corn drained (full can if you want)
3-4 cups of tomatoes, any kind is fine
2 peppers - we used anaheim
1 packet taco seasoning
2 tbsp garlic
1 chopped small yellow onion
olive oil - for cooking
cabbage and avocado for garnish
4 cups stock
4 scoops marine collagen
In a large pot saute onion, peppers and tomato together. cook on medium heat while stiring. the tomatoes will break down and get saucy.
Add the garlic, taco seasoning and stock then bring to a low boil.
Add the shrimp and corn. Continue to simmer until the shrimp is just cooked then stir in the collagen and serve.
salt and pepper to taste but we found the taco seasoning packet to be enough.
