You can make your own enchilada sauce but we used a canned brand. Use 1 cup of sauce to 1 scoop/packet of collagen. Heat in a pan, dissolve the collagen then add the chips. When the sauce boils, reduce the heat and allow the chips to soak up the sauce while you cook the eggs.
Top the chips with the eggs, avocado, cilantro, cheese, onion and sour cream.
